Our list is compiled with all palates in mind, from the old to the new, Australian icons to some of New Zealand’s finest, our local splendour and a taste of some European charm, we hope our list will cater to all.

Our wines are listed stylistically for your selection convenience, this will enable you to select by “weight” if you are looking for an unwooded, crisp dry white wine look in the front pages and if you are looking for a rich, bold, intensely flavoured red wine look toward the rear. The headings are clear and there are some brief notes to introduce each section.

If you would like to sample any wine that is not listed by the glass, please do not hesitate to ask Sarah or Jean-Yves for assistance.

We endeavour to keep vintages up to date, please excuse us if they have changed after the wine list has gone to print or if stock is unavailable.

We hope you enjoy the journey through our wine and food menu’s as much as we have creating them.

Salute
Nicholas and Sarah

Sparkling / Champagne

The ultimate, universal celebratory drink. From its origins in France where the wines have been made famous by labels such as Dom Perignon, Moet et Chandon, Billecarte Salmon to name a few, it was only natural the rest of the world would catch on eventually.

We (Tasmania) were a little slow on the uptake but after a quick turn around, are now rated as one of the worlds leading producers of quality sparkling wine. This was achieved in little over 15 years, since Andrew Pirie’s epic 95 Vintage Brut.

Not demanding food but certainly enhanced by freshly shucked oysters, caviar and most fresh oceanic delights.

Sauvignon Blanc, Semillon & Blends

This selection of wines is home to the largest epidemic of wine consumption popularity in recent history, Sauvignon Blanc. For obvious reasons, its not a complex wine style and is abundant in primary fruit flavours. As it is mostly is unwooded,  it is youthful, clean, vibrant and refreshingly dry.

These varietals can be matched with just about any food but to is enhanced by fresh seafood, crisp salads, asparagus and goats cheese. When blended with Semillon there are some subtle complexities that add to the overall charm and popularity of the grape variety.

Riesling, Pinot Gris/Grigio & Others

A wonderful bracket of light to medium bodied white wine. Stepping up into a more complex and structured selection of wines that are more food oriented. There is misconception about the Riesling grape being considered sweet, and although there are variables, especially in German Rieslings, without doubt the vast majority of Tasmanian and Australian Riesling is bone dry.

Pinot Gris/Grigio (the same grape variety, just two different styles) is becoming more popular for its perfumed nose and alluring nature. These wine styles can compliment a wide range of dishes but try Riesling with oysters, Pinot Gris with pork and a Pinot Grigio with chicken or fish.

Chardonnay

With the epidemic Sauvignon Blanc has created, Chardonnay fell off the pedestal as the wine to be consumed. With so much Chardonnay planted, we saw a lot of distortion with the styles, trying to mimic Sauvignon Blanc with unwooded fruity easy drinking styles and then at the other end of the spectrum wine styles that were flabby and unbalanced with a lot of oak.

Now days we are witnessing resurgence and the wines are focussed, tight and tangy, still with oak integration but beautifully poised and balanced. Food matches include chicken or fish as well as creamy pasta dishes and risotto.

Rose & Pinot Noir

When the Pinot is good, it provides the consumer with the utmost vinous pleasure. At its best, look for a cherry/plum nose full of earth and spice, a palate seamlessly integrated by spotless winemaking, oak and fruit acid all balanced by a savoury backbone of soft skin tannin and subtle complexities combining for that truly memorable Pinot Noir. Drink with roast duck, quail or liver pate.

Cabernet Sauvignon, Merlot & Blends

Because of its thick skins, Cabernet can be quite an intensely coloured and flavoured wine. Full of dark berries and often high in tannin, it can range from simple, rich and fruity with a silky palate to an absolute monster that will shave the enamel off your teeth! Vintage, region and producer are vital to get the most out your purchase, occasion and food. Lamb and Cabernet are a wonderful match, also beef and braises.

Shiraz & Blends

Why do Australians love their Shiraz? Its incredibly well suited in Australia and absolutely thrives in regions such as the Barossa, Heathcote and McLaren Vale. Its juicy and loaded with primary fruits, often quite high in alcohol and has a certain decadence that you only get with a good glass of Shiraz. It is a powerful wine but can be matched with a wide variety of foods, such as game, beef, lamb and braises and some heavier pasta dishes.

The Italian Corner

A small collection of some of our favourite wine styles from Italy gathered here. Although hard to pronounce and perhaps a little misunderstood there are some beautiful wines here and go so well with food. The Italians have been making wine for literally centuries so no wonder it tastes so good. Obvious differences are they are dryer and more savoury with far more complex flavours but are utterly delicious. Risotto, pasta, quail and braises will only enhance your enjoyment.
